We were born in a 40 ft steel freight container. 

Humble beginnings, with big dreams.

Our Product

Freshly baked bread, pastries, coffee, fresh salads, soups and knockout sandwiches. All made with the best ingredients we can find.

Our classes

Teaching has always been a big part of who we are, whether it's the professional development of our baking staff or helping young people who have struggled to find meaningful employment. We believe that hard graft and integrity make for delicious food and this ethos carries through to our school. We want you to learn how to do things properly using only the best quality ingredients. Our classes are taught by our bakers and are relaxed, informative and sometimes pretty funny. So get your apron on: your baking dreams start with us.

We offer a range of all-day, half-day and evening classes. 

Youth mission

At the dusty knuckle bakery, we believe that all young people regardless of background should feel confident and supported in building themselves a legitimate and financially independent future.  Only with genuine employment opportunities can we alter the mindset of those young people who may otherwise feel they have nothing to lose by pursuing criminality.
